Driving through in July - recommendations please!

My boyfriend and I are driving from Pennsylvania, through the upper Midwest, on to Utah and then to California in July.

I have the book Roadfood, which we'll use, but I'm also looking for ethnic eateries, and places to find healthy food...two things that Roadfood misses completely.

Any recs are welcomed! I think we'll be driving on I90.

Did you mean I80? I90 is quite a bit out of the way. And what kind of place would make you happy?
