House-Cured Pancetta recommendation in the Bronx

Just thought I would mention this since I have been using it for a while now and plan to return soon for more. I went into Biancardi for a few slices of pancetta. They asked me if I wanted to try their own, or the commercial pancetta. After cooking with their own, house-cured version, I hope to never have to go back to the commercial stuff. It is sold in a thick wedge, vacuum packed. The seasoning might be Calabrian in origin, as it is heavy on the peperoncino, but the meat itself is not spicy.

  1. Calabria Pork Store down the street cures its own, both plain/normal and hot/spicy.
