what is the best caesar dressing?
-- there is no such thing as good store bought caesar dressing: caesar dressing must be made to order, preferably w/ raw egg...otherwise, it might as well be ranch dressing...
-- while i've never had a decent caesar salad in NYC, i've heard that the one at Pietro's (E.43rd St, i think) is classic and good...(sidenote: likely the best caesar in the US is at Dan Tana's in LA)...

thanks...I kinda thought that there was no such thing as good store bought. I usually go to Centolire in NYC and they made it fresh tableside with the egg, anchovies etc... I just wanted to make my own salad with certain additions that I like to add.
I will try Pietro's...I think I have been there before but years ago.
It is hard because as a kid I was lucky to enjoy the finer restaurants in NYC and now that I am on my own sometimes it is just too much money. The days of going to La Grenouille and Per Se are over for now unless it is a special day or my family is going for their usual nightly dinners.

Fairway has its own in a bottle that I like -- it's a bit mayonnaise-y but I think the flavor is good. And it's not a bottle of chemicals. (Also like their "spring joy" and one that tastes almost like sour cream -- can't remember if it is ranch or blue cheese.) If you want to sample before you commit to a bottle, buy a boxed salad.

make your own croutons keep them warm until you are ready to serve. Make or buy anchovy paste, olive oil 100% or extra virgin, peel garlic yourself, and rub it into your bowl with the olive oil, lemon juice from a lemon, I like romano over parmeasan cheese and romane lettuce...
1. rub oil garlic and anchovies togethjer to make the paste
2. add lemon juice
3. toss in romaine
4 add cheese
5 egg yolks are classic but can be optional if you do not have pasturized eggs or are not worried about raw egg yolks
6/ lots of freshground pepper and add hot / warm croutons
