I would love a great light healthy recipes using mussels...thanks in advance...

  1. Moules mariniere -- shallot, garlic, celery sauteed in olive oil. A little black pepper & chopped parsley, then add your mussels & a good splash of dry white wine. Cover, shake the pan a few times to distribute & serve when the mussels are open. The broth is the best part.

      Similar prep to above but add a tin of tomatoes and let it simmer for a couple of minutes before adding the mussels. Moules provencal, if you will.

      Or for a slightly less healthy version, do a standard mariniere as above and stir in a good dollop of cream.

        Indeed the broth is the best part. My "light" problem is that I end up sopping the broth up with gobs of crusty bread.

          Scottish (or Normand) style -- shallots, garlic white wine and light cream. Top with copious flat leaf parsley. A splash of Pernod and and or fresh chopped tarragon is wonderful on it to.
