Looking for a recipe for raspberry oatmeal treats.
Starbucks used to have treats they called Raspberry Delights. They were large, triangle oatmeal things with a raspberry jam type filling. The oatmeal part is what vexes me; it was softer than a cookie, almost scone-like, but firmer and chewier than an oat scone. I think what I really need is the right butter;oat/flour ratio to get the texture right, or should I add an egg? I haven't been successful yet. Numerous google searches over the years have not been successful. Do you remember the treat? Any suggestions on how to replicate it?

IIRC, I saw another recipe for rasp.oatmeal bars recently, but I can't remember where. If I find it, I'll post.
p.s. I nave never eaten the Starbucks version, so I have no idea if these are similar.
3/4 cup quick cooking oats
2 tbsp. melted butter
2 tbsp. brown sugar
Butter the bottom and sides of an 8 inch square glass baking dish. Combine oats, butter and sugar and press mixture evenly over bottom and sides of dish. Bake in preheated 350 degree oven until lightly browned. Remove and cover bottom with 1 1/3 cups coconut. Pour 7 ounces of sweetened condensed milk over coconut. Bake at 350 degrees for 18 - 20 minutes or until coconut is lightly browned. Cool, spread with 2/3 - 3/4 cup raspberry preserves.
