I have a few favorites...would appreciate to hear about yours as well.

Chinese--Yen Ching in Boise
Thai--Sa-wad-Dee in Meridian or Pat's Thai Kitchen in Boise
Vietnamese--Dong Khanh or Pho Nouveau in Boise

Any I have missed?

Sakana is top notch. Fresh fish for sushi, lunch bento boxes are a superb value, salmon is cooked perfectly with a sauce that enhances, not smothers the fish. It is at Overland and Eagle.

Pho Nouveau and Mai Thai both have two for one wine, beer and aps at happy hour.
Both are good. The Mai Thai staff is friendly and knowledgeable, but they can get very busy and wait time can increase. I have heard that some people think Pho staff can be haughty.
My wife and I have never had that feeling. Last time we went with another couple and asked for extra bowls to share soup. No problem at all, wait person was help full and pleasant.

Sa Wad Dee is very good. Their walnut creamed shrimp is perfect.

I think Yen Ching is the most over rated restaurant in Idaho. Vegetables not crispy and fried food is soggy.

Pad Thai at 5 Mile and Overland is solid, inexpensive, comfortable and dependable.

Yen Ching for sure. I also like the garlic eggplant and sauteed string beans at Panda Garden (by the Albertsons on Vista and Overland). An old coworker raved about the once a month Saturday family-style dinners at Twin Dragon - never made it myself though.
When I worked in Meridian, I ate as Sa-Wad-dee often, I miss that place. Thai Cuisine (also on Overland) is pretty good as well http://boisethaicuisine.com/
I really enjoyed Vietnamese Restaurant on Franklin, but that was a while before the fire even, I haven't checked if they plan to reopen or anything. Pho Nouveau was just okay for me, not great. Dong Khanh is right by me - sounds like I should give it a try.
      Have you tried Mai Thai?

Just noticed your reply after many months. Yes, have been to Mai Thai...not bad. Wanted to mention the happy hour at Pho Nouveau...drinks are two for one and the apps are half price...really good spring or summer rolls.

MAybe I should give Pho Nouveau another try. I think I am 0 for 3 with meh food and poor service. Maybe they have made changes since my last visit - thanks for the tip :) By the way how was McCall?

Looks like Mai Thai added a lunch buffet

McCall was not the best food wise. We didn't plan ahead and ended up having a late dinner at a restaurant on the water...Chinese, I think, that was not very good. Ruperts opened for lunch the day we left...it was good. Wish it was open Tuesday and Wednesdays. Loved the farmers marktet that they have on Wednesday and Saturday. Good veggies, jam, olives, tapenade...loaded up the cooler and took it home the next day.
