Recommendations for a Part time Carnivore, Part time Vegan

Spending about a few days in Seattle pretty soon and I'm wondering if you guys could point me in the direction of some foodie destinations.

Things i'm into:
Places that do meats exceptionally well
Gluten free options
Vegan or raw options
Novelty; something I've never tried before
Offal
Anything else that is just a good, authentic, Seattle experience

        Can't speak so much for the other stuff on your list but I recommend Plum on Capitol Hill, which is a vegan restaurant that offers gluten-free options (especially @ brunch). Everyone raves about the mac & "yease" (which is pretty fantastic) but I think the rest of the menu is great too. If you are looking for a pastry or a snack, Flying Apron Bakery in Fremont is vegan and gluten-free and super yummy.
