Bamboo Club - chain like chinese, you could find much better in town. Chinese is also not a strong suit of Phoenix so depending on where you're from you might want to go for something we're more known for.
Malee's Thai - solid thai food.
Posh* - one of my absolute favorites, amazing food and they strive to give everyone a different dish so it's a fun place to share dishes - not cheap but worth the $. Been mentioned on board many times so do a search for more reviews.
Wildfish - great happy hour otherwise it's a good seafood place but nothing you couldn't get anywhere else.
Los Sombreros* - little more casual, but not a dive by any means. You'll get some great Mexican/Southwestern food there. I have been many times and really enjoy, sit on the patio to enjoy the AZ weather. Also search on board for this one for other reviews.
Citizen Public House - link to discussion http://chowhound.chow.com/topics/766045
Beckett's Table - solid comfort food, depending on where you're staying might be convenient but I wasn't overly wowed when I went (this is a favorite of some friends though), however they had a great booth at a weekend food festival here and were offering to email $10 gift cards so I will be trying again.
Eddie's House - my one meal there was nothing special.
Carlsbad Tavern* - great for late night food, they have a lot of green chili dishes, good casual choice.
Culinary Dropout - Very trendy spot on the Scottsdale Waterfront, I get cocktails and apps there with friends occasionally but it's one of those places where the food is about $3 too expensive and not really a foodie spot. If you're going to be going out and seeing the nightlife it's a decent place to start out the evening though, from there you can walk to many places.
some good recs in this thread as well: http://chowhound.chow.com/topics/768716
Try searching for "spring training" as well to get some relevant threads too

Haven't been to all of the restaurants mentioned but will give you feedback on the ones I have been to!
Bamboo Club - Not bad for chain Chinese Food. Everything is always very consistently tasty but keep in mind it is a chain...if that doesn't deter you, I'd eat there anyday over PF Changs.
Malee's Thai Bistro - Very delicious Thai food! Coco chili fish, drunken dragon noodles, pad thai, and tom yum soup are some great staples. Good dining experience in a good location. Another great Thai find is Thai Rama with multiple locations. This one may be a little bit more authentic.
Wildfish - like a McCormick and Schmicks, definitely not a bad dining experience, but you will not find any foodies dining here mainly because it lacks uniqueness
Persian Room- Very delicious persian food! I frequent this restaurant, their food is very flavorful.
Culinary Dropout - Menu looks more exciting than the actual food is. I've tried to go back a number of times because I like to keep an open mind and have had the same disappointing experiences with their food. Not cheap either.
Italian- Marcellino / Veneto Trattoria
French- Petite Maison
Pizza- Pizzeria Bianco / Grimaldi's
Thai- Malee's / Thai Rama
Sushi/Japanese- Hiro Sushi, Sakana, Pearl, Sushi Brokers
New Mexican- Richardson's
Lunch food- la grande orange
Modern Contemporary American- House of Tricks
let me know if you have any other questions!

malee's is very solid
posh i had an fun experience but wasn't wowed overall (although the foie is amazing) - many of the others on the board would disagree though and rank it higher than me, certainly fun if you have never done it before and have a few people with you - would count on it for a fun evening, very generous pour on the wine pairings :)
to avoid for food reasons alone: bamboo culinary, culinary drop out
nothing else on the list i would go out of my way for
what AA said good happy hour at wildfish nothing else you cant get somewhere else
I would add cowboy ciao and fnb in the area most of your restaurants seem to be located at
dick's hideaway / rokerji is worth the drive
la grande organge for a good lunch breakfast place, would also throw on daily dose, who has a great happy hour 4-8 every day and is good for breakfast or lunch
