peperocini olive oil
We just returned from several months in Geneva. Every time we had pizza at a restaurant they served a bottle or jar of hot peperocini mixed with olive oil. I looked at several gourmet store to buy some, but didn't find it. Does anyone know the recipe to make this condiment?
All you need to do is place some peperocini in a pot, add olive oil and bring to a simmer. Turn off the heat and cool to room temperature to infuse the flavours. Then you strain, pour into a jar in which you've placed a few additional peperocini (mostly for esthetics). Keep in a cool dark place. I make this in small batches (i.e. 125 ml at a time) to prevent from going rancid. I infuse lots of different interesting oils this way, such as annatto, chipotle and roasted garlic.
