This recipe is one of my favorites from the cookbook and made me appreciate munster.
Baked Couscous with Spinach, Tomatoes and Muenster from Quick Vegetarian Pleasures, by Jeanne Lemlin (I don't use the pine nuts and do use chicken stock (sometimes canned broth) for couscous:
