Buttermilk Channel is always a long wait, even worse than Prime Meats. At least in my experience.

hardest res is probably brooklyn fare. not b/c it's difficult, but the lead time is typically in months.

--Al di La Wine Bar features same menu as Al di La. Frequently, seats available at bar for walk-ins. Few tables in there, as well. Wait far less than for main restaurant. Again, same menu.

--Brooklyn Fare maintains a waiting list. I don't know how many people cancel each week, but with 20 seated each night, it is reasonable to conclude that 2 or 4 might get in off wait list every couple of nights.
