Your Favorite Recipe for Irish Stew?

I just ordered some boneless lamb shoulder for pickup on Friday and I intend on making Irish Stew over the weekend. Anyone care to share your favorite recipe?

Also, I'm not married to lamb...beef is ok too. If I find something that really piques my interest, I can always freeze the lamb for a tagine somewhere down the line.

P.S. My apologies to Mardi Gras for discussing St. Patrick's Day. We've already made our gumbo and are looking forward to the weekend!

    I more or less follow the Boeuf Bourguignonne formula -- brown the meat, put it in a pan with Guinness, vegetables, and herbs, and simmer til tender. (made with beef and wine, it's BB...made with lamb and Guinness it's Irish stew!)
