Need a side dish

What is a good side dish to serve with a caprese panini for vegetarian guests?

  1. Room temperature orzo tossed with roasted vegetables (eggplant, zuchinni, tomatoes, and red onion) and some feta cheese olive oil and a splash of lemon sounds like it would go well :)

    1. I always like a green salad, maybe a side of fruit or baked polenta fries or eggplant fries

I remembered this from a Cooking Light, and I think this is what I started out with. I have changed what I do now (I don't soak the eggplant, just salt, rinse and dry. Also, I prefer garlic powder and a little red pepper flakes instead of cayenne) - but this is a great starting-off point).

very nice thank you, I did grilled eggplant on the forman grill tonight....

      2. A salad in which beans are the main ingredient, or soup. The Trader Joe's Roasted Red Pepper and Tomato Soup is as good as homemade..
