Where to find premium/artisan pork in Southern Arizona?

I did a quick search but didn't see anything relevant - I am looking for really high quality/premium/artisan pork products local to, say, the southern half of Arizona. I'm specifically looking for good, thick pork belly, fatback, jowls, and whole large heads.
My research so far hasn't yielded much. I've gotten occasional results from the University of Arizona meat lab, but I'm looking for a step or two beyond that quality level.

Heck, I'd even be interested if there were any producers elsewhere in the country that could ship whatever odd pig bits I want to me. Any recommendations?

    Did you ever get a response to this? Up here in Phoenix you can find some interesting meat and meat sources at the farmer's markets. I am currently looking for true fatback without success.

    If you ever pass through Payson, stop at Charlie's to pick up some steaks, sausages, and/or bacon - best meat I've had in the state.

      No luck, sorry :( I've actually moved up to Washington state now, and good meat is easy to find up here!

      Lucky you! I have a friend who's a butcher up in Seattle I occasionally get tips from, but no meat. Yet another reason to move to Washington.

        Have you tried the meat purveyors at the St. Philip's Plaza Sunday farmers market? There are a few local ranches (ie, from south and east of Tucson) that sell various cuts from various animals.

        That said, if you go up to the meat counter at AJ's Fine Foods, they will order ANYTHING you want.

          I also live around the corner from Hobe Meats, so I should try them as well. I just haven't gone there since I found alternative sources for meat at a lower price.
