New truck on S. Lamar next to Gibson Bar

"Opening today (March 2): Lukes Inside Out, a trailer next to the Gibson bar in South Austin. Luke Bibby (above) will be doing pork, beef, shrimp, chicken and other sandwiches on French loaves from Phoenica, which he’ll slice in half, coat with Parmesan and toast on the flat-top grill. That cut side then becomes the outside of the sandwich, hence Inside Out. Bibby, who made his name as a music caterer for Willie Nelson and ACL among others, said the sandwich menu will include Szechuan fried chicken with sesame slaw, chipotle-rosemary grilled shrimp with blue cheese and honey, even one with chocolate bread, chocolate cream cheese and bacon. Prices will run $7-$8, which includes herbed Parmesan chips. Also look for “Armadillo eggs”: roasted potatoes wrapped in bacon with spicy sauce on a bed of spinach and smoked-onion vinaigrette for $4. The trailer will be open 4 to 11 p.m. daily, with longer hours on the horizon, Bibby said. 1109 S. Lamar Blvd. 779-7489."
