My neighbours are having us over for dinner tomorrow night and I'm bringing an appetizer. The main course is orzo risotto with scallops and shrimp. Would crab cakes be overkill on the seafood? I was also thinking of doing a roasted pepper and artichoke bruschetta with brie. Any comments.
P.S. This is my first post on Chowhound.
The snack we are bringing to our neighbor's tonite is Carmelized Onion Bites, Carmelize about 2 1/2 pound of onions til very dark. We'll season with thyme - but you could pick a more Italian herb. Mix in a couple tablespoons of creme fraiche (or marscapone or cream cheese) Spread on to a pie dough rolled out to 12 in. (cheat - use the refigerated kind) Bake for about 30 mins at 350, Could add some grated cheese as well. cut into bite size pieces - or wedge and serve over some baby greens
I disagree with others saying no to having fish before fish. I think it makes the meal extra-special and decadent! My only issue with crab cakes would be the difficulty in making them ahead of time. Perhaps you could do the bruschetta with a crab spread on top (you could broil it there if you wanted it warm), then maybe with a thin roasted pepper slice on top of the crab?
Well, after much consideration, I decided to go with the bruschetta. My neighbour is making a salad as well as the main and dessert otherwise, there were many great salad suggestions that I would have brought. Anyway, I rough chopped roasted peppers and artichokes with a bit of garlic and basil. I bought a beautiful herb and olive baguette at the local Italian market which I will toast and then spread with double-cream brie.
Thank you very much for all the feed-back. I love this site already!
an easy appetizer: 8 ounces of cream cheese allowed to soften. cover with a can of back fin crab
meat. Then cover with cocktail sauce. We use horseradish, lime juice, ketchup, Worcestershire
sauce. We go heavy on the horseradish. Serve chilled with Carrs crackers. Never any left
this appetizer is ridiculously easy...but i just made it again for an oscar party and people raved about it. it was from bon appetit a few months ago.
salt & black pepper kettle chips. put little slices of smoked salmon on the chips....top with lemon creme fraiche. (just zested lemon peel to taste...i like it really lemony).
sometimes i add some chives.
it's got great texture and taste....and is, obviously, a breeze to assemble.
i wouldn't bring seafood, or anything starchy/cheesy, since that's the main course. how about a lovely salad? this weekend i made a pulled parsley and watercress salad with dijon and orange blossom water vinaigrette. garnished with roasted red pepper, black olives, marcona almonds and candied lemon peel. my guests just about licked the platter.
or a charcuterie/meats/marinated veggie plate? prosciutto, sopressatta, marinated artichokes, roasted red peppers, olives, that sort of thing.
whatever you bring, make it something that won't need to be cooked at their place.
I think you don't want to bring anything that would overshadow the scallops and shrimp. The bruschetta sound like a delicious opening to the meal. I'm also partial to chicken liver crostini or something a little spicy to start a meal like zucchini and walnut fritters with Aleppo pepper or bourek.
