What chocolate for home made chocolate pudding?

I'm planning to follow the recipe for chocolate cornstarch custard in an old Betty Crocker book, which is basically the same thing as the jello pudding we all made when we were kids made with your own ingredients.

Any recommendations on chocolate brand to give it a real chocolate kick? I'm thinking Dagoba or maybe Scharfenberger, but I seldom cook with chocolate.

    does it call for chocolate AND cocoa, or just chocolate? i've seen recipes that do it both ways. and i assume you want a recommendation for a semi- or bittersweet chocolate...?

    if using cocoa powder, a dutched product will be better for pudding - i like Callebaut or Cacao Barry products for both cocoa and chocolate...though i've heard that Trader Joe's cocoa powder is excellent.

    regardless of the chocolate/cocoa you use, the secret to amplifying the chocolate flavor in any dessert is to add a bit of powdered espresso or *strong* brewed coffee.

      I usually use Hershey's cocoa or sometimes Ghiradelli. and it is one of my favorite comfort desserts:)

        I also use Hershey's and Ghiradelli. In addition, I sometimes make the cornstarch pudding in the microwave. Just use a large enough microwave dish to prevent boil over.
