Can anyone tell me if there is a brand of pareve chocolate that can be used for candy making but does not have to be tempered?
Elite's bittersweet melts down pretty well - I've used it without tempering many times and never had a problem.
I don't make candy, but for baking I use Alprose swiss baking chocolate. I prefer the flavor to Elite and paskez. I don't think that anyone makes an unsweetened parve baking chocolate.

I don't know if it's kosher for pesach or not. But it has an OU for the other 51 weeks of the year.
