Do any butchers stock Australian Wagyu?
I know this is a bit outside the recent butcher culture, but I'm visiting Chicago from Australia and bringing back a healthy supply of wine (quite a few stellar cabs and of course, monster shiraz's). I'd like to be able to pair some dinners with Aussie wagyu but haven't been able to find any suppliers online. I've found plenty of American wagyu, but most seems to be a cross breed. In Oz, there are a few ranchers who have full blood wagyu that wasn't tainted by the foot and mouth epidemic that swept through the Japanese stock that casued the US to stop importing it.
If not, I'll go for something local (not a bad thing at all) but I thought it would be a good way to showcase boutique Aussie wines which I didn't recall seeing too much of back in the US.
