help with breakfast recipe--gluten free!

having a brunch and need an egg casserole recipe that's gluten free! all the good ones seem to have flour or bread in them. any ideas??

    take any veggie you have on hand and steamed, saute, roast them.

    you want a total of 4 cups total. my favorite combo, onions, mushrooms, potato and zucchini.

    spray a 9 x 13 baking dish with Pam. place veggies in dish. pour a dozen egg whites over veggies.

    Bake in 375 oven about 30 mins or until set. once set, sprinkle parmmesan cheese on top (about 1/2 a cup in total) and put back in oven until slightly brown.

    NOTE: feel free to use egg yolks, protein, or cheese. If you are sauteing the veggies seasons appropriately as you cook them.

    This is actually great cold.

      We've made egg casseroles with a hashbrown crust that works great for gf and non-gf eaters. I don't have a specific recipe for you because we've tinkered with it every time we make it. But a quick google search should get you some good results.

        Sausage Zucchini Casserole? Or how about a casserole based on Eggs Sardou? Or a Green Eggs and Ham one, with spinach, cream, parma ham and eggs, topped with parmesan?
