Best Fresh Pasta Recipe
If you're using a food processor, you don't need a recipe at all! I usually figure on a cup of flour per person, assuming big eaters and you want leftovers. If not, cut back. I then mix in one egg per cup of flour and mix thoroughly. It'll still be pretty dry. Go ahead and turn it back on (I use the kneading attachment for ALL of this, by the way) then drizzle water in slowly until it comes together in a ball. Knead by hand a few minutes, adding flour if you need (but if you added the water slowly enough, you won't need to), then send it through the pasta machine.
