My wife wanted to experiment with a different masa this year for Christmas tamales. Last night she brought home a small bag of masa from Los Toros Meat Market and made a half dozen tamales. The result was tamales as smooth as Nana’s were. That result has been a quest for decades. No graininess whatsoever but almost silky -- gormet! The texture is so smooth that I really did not believe it was real masa but the taste is sure a true corn flavor. This is the real thing. I have posted before about their Bags of fresh made Chips, Salsa and guacamole but I never even realized that Los Toros sold masa. Today we tried the re-heat and eat test. Perfect! So now we will go back in the morning for 15 more pounds. Sometimes Tradition can be so good!

    As I've explained to others before, most Mexican Home Tamale makes I know use store bought prepared Masa, not only is more convenient than making your own, it has the PERFECT texture in terms of Lard content and for spreading on Corn Husk or Banana Leaf. I think it's because they mix it in those BIG industrial mixers that the texture just gets DEAD on... :)

        Nope, they just sell you a big plastic bag of Masa! Most families have their own recipes... or you can keep an eye on this thread on the homecooking board! :)

          You can buy the masa, meat, corn husks, red and green chili sauce, dried chili pods, olives, and any seasonings you need at Los Toros Meat Market. Not to talk recipes here but the package of corn husks has a basic tamale recipe on the back. But you can find many more recipes on Chowhound recipe page and on the web. Then play with it to make your own. We will make beef tamales and Chili & Cheese tamales. Two days ago we made chili & cheese tamales using Tillamock Jack cheese we already had with the masa and some green chili sauce we bought from Los Toros. Using that smooth masa they were perfect. For thirty plus years we bought masa from different local stores in SGV and it was good but not as smooth as we remember Nana’s tamales being. Los Toros does it right. I also like Los Toros because the people there help you find what you need. Do not be afraid to ask them for help. They take pride in helping. If you want to try their masa already made into a tamale just go to the restaurant next door – same family. Today I will buy every thing else we need at Los Toros (25 pounds of masa – not 15 pounds) to make our traditional dinner. Oh, the reason my wife wanted to change stores is because last year we were half done making tamales when we tasted some and found out that the masa was bad – Way to much salt. The place we bought it from (a very large Mexican food factory in SGV) replaced it but we had to remake six dozen. So we learn to sample/taste each bag before we add our labor.

            I just went to Los Toros and got my 25 pounds of masa (under $24.00). I asked if they had a recipe for tamales and the tamale sauce and they said, "yes" and will give you a copy. The sauce is a matter of taste and if you like can just buy the canned tamale sauce over the counter to make your first batch.
