This will be a short review as I believe you shouldn't know exactly what to expect as you have dinner at é. For those that don't know, é is a 'secret' restaurant hidden inside Jaleo, at the Cosmopolitan in Las Vegas.

In short, it is as close to perfect food as I have ever tried, and miles away from anything else I tried in Las Vegas. And I tried most of the good stuff (Robuchon, Twist, Bouchon, Savoy, etc.). With a dinner comprised of several appetizers, main courses and deserts, I couldn't say what I liked best. Every single course was beyond good. And the setting, the chefs and people that work there make this a really unique experience everyone should have. You can really tell the chefs feel fortunate to be cooking the food they are cooking.

If you are looking for a truly great experience and the best food in Las Vegas, then é is your best bet.

Oh, and they told me the reservation system is working fine now.

      We ate at Twist last night and talked with one of the waiters there about e. He apparently also works off-days at Jaleo and knew about e. He said that pretty much everyone they (e) have served so far have been fellow "foodies" that have heard word of mouth. But that in the next couple days there will be a large NYT write-up about them. They then anticipate that after that the reservation will become nearly impossible to get. So send in your requests now.

        Reservations are accepted only one month to the date in advance. I know since I submitted an email request for a date in early April, and received a nice reply that I had submitted my request too early.

      Where do I find the reservation system, or what is the proper system, it's not on line at Jaleo?

        We just got back to our room after dinner at E.
        Everything we heard was true.
        We had the great fortune of having the all the other diners that should have been there cancel. So my wife and I had the while event to ourselves! Edwin was a terrific chef and host. And Stephanie was so sweet and fun to talk so. It was amazingly intimate. A once in a lifetime event. My wife said it was without a doubt the most fun she has ever had. I won't go into too many details on the dishes, other than to say that they were all flawless.
        We talked non-stop with the chefs and they were so great. So happy to talk about everything.
        At one point they came in all excited to tell us that Joel Robuchon was in the restaurant and we all sat around talking about how much we loved Robuchon.
        Needless to say: e is easily the best restaurant in Las Vegas, and when paired with the experience of interacting with the staff, it rivals our experiences (or even exceeds) those of Fat Duck, Per Se, French Laundry, or Alinea. .

        FYI, the $250 pp charge not only includes wine paring and service, but also the tax. It is an amazing steal. So much so that I included a generous additional gratuity over their repeated comments that it was not required.

        You MUST NOT miss this place

          I'll be sending in my request for a reservation is about 2 weeks (I'm heading back to LV in early April). Hope they can fit me in. Big dercision now is whether I should give us my reservation at Sage or Guy Savoy (I also have reservations at CUT and Robuchon). I was planning to give up my Sage reservation, but a friend suggested I give up Savoy since I already have a reservation at Robuchon, and he really loved Sage. Any other thoughts?

            Just another different thought....if you haven't been to Raku...don't miss it. Order their Kaseki dinner (three choices of price) and it will be one of the more special meals you can have in LV. Even their regular offerings are wonderful.
