Basque Home Cooks-Basque Soul Food

Our Txoko dinner group is planning party number 4 and our first food gathering where the cuisine will be all Basque.

I'm champing at the bit to do my part and am looking for some guidance from Basque members of Chowhound.

I live in Austin where the grocery stores are unbelievable. A nearby giant, international market makes a Trader Joes look like a faltering quick mart in nowheresville.

In other words I can get damn near any supplies I need, that won't be a problem.

I want to make some Basque soul food for this event. I'll be doing a lot of research over the next 9 days prior to the party and am seeking guidance from skilled Basque home cooks.

Ideas, thoughts, suggestions, recipes?

  1. Basque Tripe Stew. If that's not on the menu, it isn't a basque event.
    Gabure would work well into any menu for basque dinners.

    1. I got some Basque food, which I know nothing about from the Frugal Gourmet Immigrant Ancestors. Theres some tongue in tomato sauce not Italian, tomatoes and beef stock and what was called Basque beans that I cook all the time. It's beans cooked with onions, garlic, pork, ham, and the liquid is beef stock, no water. Also there is Basque bread which seems like Hawiaan Bread, I don't like it, too sweet.
