Lots of pork belly, what to do?

I recently came into a decent amount of pork belly from a local farm. What are some good ways to showcase it? I'm really not looking to make bacon. I am thinking if roasting it in some Asian fashion. I'd also like to make some ramen. What are some good recipes or uses that really highlight this cut?

  1. Click to Upload a photo (10 MB limit)
  1. cure for a couple days in salt, sugar, ginger, chili, corriander, cinnamon

    braise in soy/ stock

    roast until crispy

    1. siu yook, sam gyup sal, or red cooked pork belly!

      1. Buta no kakuni, a very simple Japanese braised dish that showcases the pork, or homemade bacon or a simple cure.
