Lots of pork belly, what to do?

I recently came into a decent amount of pork belly from a local farm. What are some good ways to showcase it? I'm really not looking to make bacon. I am thinking if roasting it in some Asian fashion. I'd also like to make some ramen. What are some good recipes or uses that really highlight this cut?

    cure for a couple days in salt, sugar, ginger, chili, corriander, cinnamon

    braise in soy/ stock

    roast until crispy

      siu yook, sam gyup sal, or red cooked pork belly!

        Buta no kakuni, a very simple Japanese braised dish that showcases the pork, or homemade bacon or a simple cure.

          Braise with kimchi.
