Gorditas el Gordo is the best for tlacoyo, gordita and haurache. Hands-down. Done.
La Loma for tamales, Taco Taxi for tacos Mexicanos. La Sirena Gorda for caldo and all things seafood.
Ecuadorian and Columbian: Central in NE.

re: shoo bee doo
Pineda's Burritos are excellent, as are all of the recommendations here. However, you can't mention Midtown Global Market and not La Sirena Gorda. Those octopus tacos are destination food for me.

Any of the vendors in Mercado Central at Bloomington & Lake
Los Ocampos (inside mid-town global market or across the street)
Manny's Tortas for a Cubano (at Hiawatha & Lake or in Mercado Central)
La Loma for Tamales (Mercado Central or Midtown Global)Personally, I like the tacos mexican style (two soft corn tortillas, meat, diced raw white onion and cilantro with some salsa). I like Pork Al Pastor but there are usually many other good choices. At Los Ocampos, I like the sopes, masa dough/batter fried on a griddle then topped with stuff.
There are a ton of choices. It'd be easy to gain 20 lbs and spend a month trying them all.
Oh, and La Loma (at least in Midtown Global) sells 4-packs of frozen Tamales you can bring home and steam on a weeknight for a quick and tasty meal.
