I have the beef, now what do I do with it?

I just picked up a 3 lb beef tenderloin roast...what's your favourite way to cook it?

  1. Marinate it,sear it and finish in the oven, You can do it whole or cut into steaks. If you have,use a meat thermometer....enjoy!
    P.S for a quick sauce remove meat from pan,drain most of the fat,deglaze with red wine, scrapping all the bits off the bottom of the pan,reduce a bit and finish with a knob of butter.

      I cook it this way too. Then I usually make Soulard's cognac sauce (google it).

        Thanks - it turned out great! Glad I had a meat thermometer or I definitely would have taken it out too early.

      2. You need to remove all the silverskin before you do anything else.

          Yea,sorry I should have mentioned that part but I figured a 3lb tenderloin would have been prepped by the butcher.

            Yep, one would expect that but I've ALWAYS had to prep mine... Not that it's all that difficult to do but if it hasn't been done chaos will ensue! :)

              Agreed :) Chevy14: You could also do a classic "Beef Wellington" Some puff pastry some mushroom duxelle and bob's yer uncle
