What condiments/sauces do you always have on hand?

I am addicted to some condiments and they are always stocked in fridge and cabinets. These are a few:

Worcestershire Sauce
Cross and Blackwell Chow Chow/Piccallili
Sriracha Hot Sauce
Barons West Indian Hot Sauce
Cranberry Sauce
Frenchs Onion Mustard
Grey Poupon Dijon Mustard
Pickapeppa Ginger Mango Sauce

I have a ton....

What are yours?

      Frank's Red Hot. Just checked and I have two bottles in the fridge right now.

        Probably over 50! Seriously.
        Worcestershire Sauce
        Homemade ketchup(s) including Papaya
        Homemade mustards (a few kinds)
        Kecap Manis
        Sriracha
        Ponzu
        About 25 vinegars - favourites are Sherry, Champagne, real Balsamic, Blueberry Basil, Fig, etc.
        Many homemade jellies I use with meat, especially duck, venison, etc. - lavender, nectarine, caramelized onion and garlic, roasted apple, tomato jam - too many to list
        Homemade mayo
        Liquid Smoke
        Mint sauce for lamb
        Red and green Thai chili pastes
        Several homemade chutneys, marmalades
        At least three homemade BBQ sauces always
        I also make preserved lemons to use as condiments sometimes.
        Homemade pestos, usually 2 kinds (either roasted red pepper or oven roasted tomato and basil)
        Shoyu
        Tabasco
        Many flavoured oils I make in small quantities such as basil, roasted garlic...
        A few salsas
        Do compound butters count? If so, I make lots of those, too.

        Those are just what we normally have - I'll make lots others but not as regularly.

            Well, I don't have a ton, but I do keep several sorts around. I do have Worcestershire Sauce, Tabasco, pickled jalapeno peppers (love these!), sour pickles, Gulden's Brown mustard, Coleman's English mustard, French's mustard, Hellmann's light mayo, various vinegars the favorite of which is white balsamic, prepared horseradish, Heinz 57 (for Mr. Sueatmo only), and I've got a bottle of ketchup around somewhere. I also have an unopened bottle of Stubbs' Liquid Hickory Smoke. If anyone has an idea what to use this for, I'd love to hear it!
