Calf's Foot in Eugene, OR?
I'm working on a recipe for rabbit rillettes from Reynaud's Terrine, and I can't find a calf's foot from any of the butchers I normally use, Long's and Custom Meats. I know I can substitute oxtails, but I'd really like to do this right. Any clues?

You could try Benedetti's on Centennial. If he doesn't have it, he may be able to get it. He seems to have a good relationship with local farms.

Thanks for the tip! I actually found calf's foot last night at Plaza Latina. After discovering that it is a crucial ingredient in menudo, I thought to check their meat counter and was rewarded. It comes in what I now know to be a typical format, cleaned, blanched, and split. I couldn't determine where the beef is sourced from, but at this point I didn't feel like I could be too choosy.
