Need Presentation Idea

TommyJayDee Feb 6, 2011 10:33 AM

I would like to serve David Chang's Country Ham and Red-Eye Mayonnaise (coffee mayo) as an hors d'oevres. His current presentation does not lend itself easily to the cocktail party atmosphere where guests have only one hand available to take and bite. It is also very basic: country ham flat on a plate with a bowl of mayo.

I'd like a more elegant presentation and I don't mind adding more ingredients if I have to. Any ideas?

Canapes using mini baking powder biscuits as the base; ham and mayo on top.

That's exactly what I was going to say.

Or cubed in a spoon; I know, I know - some hate the spoon idea but it could work.

I was also thinking along the biscuit line or how about tiny blini?

I was thinking more along the lines of a curl of ham with the curl held in place by a toothpick. This would give you some height and you could smear a little of the mayo inside the curl or set a small bowl of the mayo along side for dipping.
