uh oh, I just cut this fruit open and it's not ripe - now what?

Bought a tamarillo out of curiosity. It's beautiful skin and plumpness made me think it was ripe but it's tart/sour - or is this how it tastes? I was hoping to eat it out of hand but maybe I can cook with it? Any suggestions?
