Tags for threads

How does a thread acquire those 'tags' listed at the bottom of the thread? What's the algorithm for assigning those tags?

Some threads seem to have many odd tags assigned or tags that reference just one or two occurrences of a word in, say, a sprawling 300+ post thread, etc etc.

Bumping this old post... and how does one remove them?

for example there's a thread about Park City Utah restaurants, and it has a discussion of the Deer Valley ski area. So a tag "deer" got created... like venison.

Makes no sense... how can we edit the tags?
