mini deep dish pizzas
hi there,
i want to make these mini deep dish pizzas for superbowl sunday. do you guys think i can assemble them with all of the toppings, etc. and then just bake them in the oven the day of straight from the freezer?

would also love to hear your toppings ideas! :) i have pineapple and ham, sundried tomato and mushroom, red pepper and chorizo so far.

You could bake them straight from the freezer but I'd recommend you prepare the pizza dough foundation and perhaps add the cheese but hold off on the other toppings until ready to bake. Some toppings (e.g. mushrooms, tomatoes) don't freeze very well and you will get better results if you apply these to the pizza foundations while the oven is pre-heating.
As for toppings, remember that chorizo can be very oily. Might work better to fry it separately ahead of time. I'd try to limit toppings to cheese plus two other ingredients for each pizza. That allows for a better balance of flavors without overwhelming the diner with a chaotic blend of flavors he/she can't truly appreciate.
Toppings, other than those you listed, might be anchovies, chicken (you can boil a chicken breast in about 30 minutes and shred it for pizza topping; or cut into chunks if you prefer, finely chopped mushrooms and black olives with some crumbled bacon, a blend of three cheeses (perhaps a goat cheese if you have it).›1 Reply
