Bacon Jam

Made a batch of Bacon Jam. Not sure what all the fuss is about. Mine had a very strong vinegar taste and it wasn’t something I would make again. As a matter of fact I will probably end up throwing the batch out. I love bacon, I love onions, I love garlic, I love vinegar, but….something seems amiss. Any thoughts?

    Try it with less vinegar or no vinegar at all. Here is a recipe that doesn't call for any.

      Thanks cowboyardee. I'm going to give it another try next week and leave out the vinegar as you suggested.

        I made the Homesick Texan recipe mentioned on the thread in cowboyardee's post and it's very good, not really vinegary at all (although it does call for a small amount). I added a tiny bit of sweetener, but that was more to cut the heat from the chipotles than the tang from the vinegar/adobo.
