Spring restaurant: your recommendations?
My wife and I will be in Paris for a week and want to go to Spring several times. Can you add your recommendations as to how to best enjoy it, eg, dinner, lunch, wine bar, boutique?
We love sitting at a great wine bar sampling wines and sharing small dishes. We also enjoy a wonderful lunch in a relaxed setting.
We know dinner reservations are very tough. So too for lunch? Can we drop in to the wine bar? Any food served at the boutique?

"We love sitting at a great wine bar sampling wines and sharing small dishes." This is possible without reservation. However, it can be easy to run up a sizable tab if your are not attentive.
"We also enjoy a wonderful lunch in a relaxed setting." As Parigi advises, this is one of your better options.
"Any food served at the boutique?" You can pick up reasonable and delicious sandwiches at the boutique as well as excellently sourced ham and sausage, etc sliced to order. No seating but a bench in front serves as a place to enjoy the sandwich.
If you are patient or/and persistent, you may well snag a dinner reservation. Cancellations do occur, so remember to call often and late in the afternoon.
I found lunch at Spring the most relaxing meal of a week in Paris. After countless hours of restaurant research then there is a question of what booking can be secured? Lunch or dinner? Fixed price or a la carte? Which options for the set menus?
The lunch at Spring was a no choice set menu and never has a firm hand been appreciated so much.
