soggy oatmeal fruit bars :(

i make these oatmeal fruit bars regularly but somehow this batch got super soggy after refrigeration and wondering what happened. the recipe is simple, flour, butter, brown sugar, salt, soda, oatmeal, pressed into pan then i pour drained defrosted frozen fruit on top, top with the rest of the dough and bake for 20 at 400. did i i not wait until they were cooled to cut and and refrigerate? no, i waited b/c i baked them in the morning and put them in after lunch. could i put them back in the oven to dry out?

  1. Did you use butter or margarine? When I make oatmeal jam bars they come out nice and crispy when I use butter, but soggy and sticky when I used margarine (I don't do that since I figured out the problem).
    Your fruit may still have had too much moisture in it. I'd say go ahead and try and bake them some more at a lower heat, so they dehydrate but don't brown.

      i used butter but i think you're right about fruit having too much moisture. i already cut them up. you think it's ok to put them back in the oven?

        You could possibly experiment with single servings in the microwave too - t
        checking at short intervals. If nothing else you might end up with a nice topping for breakfast yogurt, or even just with milk poured over.
