italian ricotta cheesecake recipe needed

redgirl Jan 29, 2011 05:39 PM

years ago, my husband and i used to eat at a little brooklyn red sawce joint that had the most amazing ricotta cheesecake. it was obviously homemade and it was very eggy and kind of oozed egg and cheese. soooooooooooooo good. i've got a mind to make such a thing but want to solicit any sites for such a cheesecake. not a creamcheese cake at all.

the frankies spuntino cook book has one that is viewable on google books. haven't cooked the recipe but other things from the book are good.

Here's one that is made with ricotta, but cream cheese as well, and is a recipe for cannoli cheesecake
And, another that is from the Soprano's Cookbook, billed as Carmela Soprano's Ricotta Pie:

This is the one & only recipe highlighted by RR I can honestly recommend. The girl knows her ricotta cheesecake:

3 lbs of ricotta & 9 eggs. Super rich.

Just came back from the store and got my fresh ricotta today. Will be draining overnight and making this tomorrow. I'm really looking forward to trying this one out.

I'm gonna try this one with the Bonomi amaretti cookies instead of the saviordi for the crust; had these already.
