Evergreen in Chinatown. The Peking Duck two ways is the way to go - first course is the skin with the pancakes, hoisin and scallions; second course is the meat stir-fried with vegetables. Absolutely heavenly and doesn't need to be ordered ahead.
Shanghi Terrace in the Peninsula hotel was good a few years ago. It has been a while and I believe it required notice so you will want to call them.
