Relish recipe

I am looking for a recipe for relish that is a lot like McCLure's relish. If you are not familiar with it, it has no onions nor vinegar.

So if you have a relish recipe without onions or vinegar, please write, I will greatly appreciate it!

    Their web site doesn't include an ingredient list so no help there! They must make a naturally fermented pickles which is then turned into relish. Making pickles this way takes about 3-4 weeks. You can find methods for making pickles this way look into Ruhlman's Charcuterie, Simon Love to Cook and online, Alton Brown's Dill pickles. I have tried the first two and they are quite excellent.

        That's very odd that they use vinegar in their pickles but not their relish.

        Also, if you want vinegar-free pickles, Bubbie's are really good.

      I'm pretty sure the relishes do contain vinegar. The pickles are certainly very vinegary.

        I know, that's why I was so happy to find one without it (I don't eat vinegar), but at 7$ for a small jar it is too expensive to eat often.
