Vietnamese bbq pork recipe

I’m looking specifically for a bbq pork recipe that I can use for banh mi’s or vermicelli.
The pork at my local Vietnamese restaurant comes out red with a very sweet finish. I can’t locate anything online that would indicate why this version comes out red. Unfortunately, there’s a language barrier which makes it’s difficult to ask for a recipe.
Can anyone help?
