Do you know of any websites or blogs that focus on pickling? Or at least have great info about the process?
If so, which are your favorites?
check out pickyourown.org - we use them as a jam-making resource all the time. not the prettiest site in the world, but great info.
The National Center for Home Food Preservation is my go-to: http://www.uga.edu/nchfp/
I am generally pretty relaxed with food safety, but I'm pretty serious about pickling/canning safety since I think the risks are greater when things go wrong. Most reliable pickling/canning books and sites should base their recipes on NCHFP guidelines, either from the website I linked, the NCHFP published guide to food preservation, or the Ball Blue Book.
