Light potluck dish (main)?

I've been asked to bring the main dish to a potluck this week. The theme? Light cooking. I need ideas for a dish that is light in calories but not on taste and that also travels well; I'll be going by train, so the more Tupperware-friendly, the better.

    You don't mention how many diners you will have. For pot lucks I like braises for their tenacity (they are usually better after reheating) or pastas for their portability.

      I've brought this recipe (originally from Cooking Light) to many potlucks and it's always a hit - great sweet/salty/savory combo., looks pretty (especially if you use red quinoa), it's novel (depending on your crowd, they may or may not have had quinoa) and it travels well - good warm or at room temp to boot! http://find.myrecipes.com/recipes/rec...
