Light potluck dish (main)?


I've been asked to bring the main dish to a potluck this week. The theme? Light cooking. I need ideas for a dish that is light in calories but not on taste and that also travels well; I'll be going by train, so the more Tupperware-friendly, the better.

  1. You don't mention how many diners you will have. For pot lucks I like braises for their tenacity (they are usually better after reheating) or pastas for their portability.
    Perhaps something like this or this would be good?

I've brought this recipe (originally from Cooking Light) to many potlucks and it's always a hit - great sweet/salty/savory combo., looks pretty (especially if you use red quinoa), it's novel (depending on your crowd, they may or may not have had quinoa) and it travels well - good warm or at room temp to boot!
