Light potluck dish (main)?
Hello,
I've been asked to bring the main dish to a potluck this week. The theme? Light cooking. I need ideas for a dish that is light in calories but not on taste and that also travels well; I'll be going by train, so the more Tupperware-friendly, the better.
Thanks in advance!

I've brought this recipe (originally from Cooking Light) to many potlucks and it's always a hit - great sweet/salty/savory combo., looks pretty (especially if you use red quinoa), it's novel (depending on your crowd, they may or may not have had quinoa) and it travels well - good warm or at room temp to boot! http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=10000001142040

You don't mention how many diners you will have. For pot lucks I like braises for their tenacity (they are usually better after reheating) or pastas for their portability.
Perhaps something like this http://www.eatingwell.com/recipes/greek_chicken_vegetable_ragout.html or this http://recipesrandycooks.com/2010/12/... would be good?Randy
