How Do You Hire A Sushi Chef For A Party?
I think that it would be a great idea for a party and was wondering had anyone ever done it. Any advice pointers etc are welcome.
Craigslist? ask sotto voce of your local fave if he or an assistant ever take private commissions on their off night?
What about checking with some local cooking schools, or posting a notice at the restaurant supply stores or food / produce / seafood distribution centers? After you get some replies, you can check them out and pick a couple of front runners. Before the big night, have them each prepare a sample meal ( on different days, of course) for you and a friend to make sure there are no surprises and you're comfortable with the presentation.
Once you decide which chef to hire, much like hiring any outside caterer, make sure you get everything written and confirmed in advance: how much product he will bring, and how many servings he will prepare. See if he will bring his own counter or what tablespace you will have to provide. Also, the time frame is important -how long will he serve. Also, I'd get references from other people he's done private parties for. I wouldn't use anyone who hasn't done a private party.
