Looking for fresh pork livers in the twin cities, most asian markets I've been to have pork liver but not the freshest. Was thinking of Long Chen but don't want to buy a whole animal. Anybody have any suggestions?

A discussion about cassoulet recipes has been split to the Home Cooking board. Please continue that part of the discussion here: http://chowhound.chow.com/topics/7606...
    Thank you.

and you might be able to order them through Golden Fig on Grand Ave. in St. Paul. They carry Fischer Farms products and do a lot of special orders. I get chicken livers from Prairie Pride through the Golden Fig.

Also I would try Kramarczuk's. They have quite an array of pork-related products. I get fresh hocks there for our Fall cassoulet extravaganza.

I'd try calling Fischer Farms. For whatever reason, they don't have liver listed on their products list, but I'll be darned if all pigs don't have livers. They make frequent deliveries in the Twin Cities, so you can pick it up from where-ever he happens to be:
