Looking for good freezer/crock pot recipes- especially veggies
Groan. This may be a boring topic for some of you... But google hasn't proved too helpful; I need real home cooks who I actually trust.
Started school this semester, work full time, and I am step-mom to three boys. All four of my guys need to be fed and are basically helpless if I don't cook, or leave a par-prepared meal with instructions the nights I'm not home.
The instructions usually involve something like "nuke green bowl 3.5 minutes. Grill meat." or "remove from crock pot and serve over cooked noodles."
There will be fewer mornings where I can do as much assembly as I have and I need some ideas for foods that freeze well, or can sit in the crock pot all day well, to make my life easier. Right now I make gigantic batches of meatballs that can be eaten a variety of ways, and I keep large batches of caramelized onions and shredded pork shoulder on hand in the freezer. The hardest part is selecting vegetables that don't get gross or require a lot of preparation.
It's not that I don't love doing the work, but over the next few months it will be impossible! Please help!

re: the vegetable issue, can you teach the boys how to steam them in the microwave? or at least nuke frozen ones?

My favourite thing to do in the CP (other than stock) is jerk chicken. Put chicken in the pot and toss with jerk sauce. Add a bit of citrus juice and turn on low.
Serve over rice (preferably cooked with coconut milk) and some slaw or mixed veg on the side.I've done chicken or pork pieces with kimchi in the CP. Again, serve over rice.
Red beans and rice works well. My recipe was a adapted from a CP recipe. It looks very different now but still......
Carnitas. Make tacos for dinner. You can also use beef or chicken to do the same thing. It may be a bit boring but simply putting some beef and a can of "Mexican" Rotel will provide a simply, quickly assembled meal.
