What to do with potato starch?

My MIL has just gone into assisted living, and we're cleaning out her house. In the kitchen was an unopened container of potato starch. Any idea how to use it?

  1. unless you're planning to do any gluten-free or Passover baking, you might want to donate it...or you can use it as a thickener for sauces, stews & soups.

    1. One of those lighter than air cakes... Maybe or something like it.

      I like GHG's idea to donate, too, even if it's just to your favorite gluten free person! Gluten free bakers can go broke on flour.

        Great idea, I'll donate it to a friend whose husband is allergic to everything!

      2. If you've never had potato kugel before, it's a welcome change from more standard potato fare. And no, it's not just for Passover. I've made this recipe, which calls for 1/4 cup of potato starch, many times and everyone loves it:

        As goodhealthgourmet points out, it is also a thickener. Use it in the same way as cornstarch, by mixing it with some water and adding the slurry to the hot liquid.
