My search for caul fat
Hi, I just joined Chowhounds today. I found this site over a year ago while searching for caul fat. Didn't find an answer here but did find a great site for someone who loves cooking and eating.
I finally decided to stop lurking and start participating.
I've always loved to cook but never seriously studied or practised to improve my skills. After surviving a rear cerebral stroke two plus years ago I decided it was time to take what I love to do , really learn about it ,and take it to another level. One of the things I'm doing/learing/screwing up/trying again is French cooking. That's where caul fat comes in.

Over the last year I've been searching for a source for caul fat in the Virginia area with several false starts and no luck. I tried small markets and butchers, Dean & DeLuca's etc.
I was resigning myself to ordering in frozen caul fat and paying a fat price.
Finally about three months ago at the Saturday Arlington Farmers Market my luck changed. After talking to the folks at Ecco Friendly Farms (they love cooking too) they said they'd see what they could do. And they did it.
They now have a small supply of it every Saturday after they've butchered hogs. It's one large sheet per package and it's very fairly priced. If they don't have it on a particular Saturday it's because no hogs were butchered. Just let them know and they'll get it for you.
This stuff is amazing to cook with. I used to wrap terrine's and country pate's with the thinnest bacon I could find. It worked but wasn't very appealing looking. The caul fat keeps them moist and add a beautiful clear flavor. And looks good too.
I've also wrapped chickens with it for roasting and it's GOOD.
I just did a google search again for caul fat in this area and came up with nothing so I hope this helps someone. And pays back a little for what I've gained here.
