we are looking for a place that specializes in interesting and exciting unique types of sushi. any recommendations?
sushi central - always something unexpected, top notch quality, and usually locally sourced.
Not exactly sure what weird/unique means, but I'll bet if you talk to Shiro at Orris he can either make it for you or tell you where to look.

Odd recommendation, why Orris for sushi?
More for the consultation.
Sasabune...on Wilshire Blvd...has fish flown from all over the world when you go for the omakse
sasabune is a pre-sliced and oversauced fish warehouse. skip.
Sushi Masu on Thursdays gets fish shipped in from Kyoto(I think) as opposed to the regular tsukiji market which typically yields a wide variety of different fishes
