Custom meat smoking

does anyone know for a place where I can take meat and sausages which I will prepare for custom smoking. Cold smoking preferred.

      Hmmm. Not sure the Canada Food Inspection Agency would dig it. Are you certified? If not, anyone handling your stuff might not be for long.

        I found on internet couple of places through Canada who is doing that, but can not find any info in Ontario. This is not for reselling this is for my home use.

        I would try a local butcher, although with health laws etc that are in place I would be very very surprised if anyone would actually do this for you. Especially cold smoking.

          Try searching for "custom processing" in your area. I'm out west and we have friends who hunt, they take their game to a local shop who'll process & smoke.

          Looking for custom meat processing in Ontario turns up: http://www.yellowpages.ca/search/si/1... I don't know quite where you are otherwise I would have narrowed the results. You may need to make some calls but there looks to be a few places who take game for processing - whether that also includes smoking would depend on the shop.

            I'm guessing the key word here is "game," which isn't inspected, so perhaps anyone handling it isn't either, or is subject to far less stringent regulations.

            Freye's, a Mennonite abattoir in Mount Forest, will custom smoke beef or pork, and make sausage meat for smoking. However, you have to buy the meat from associated growers in the area, available from www.beefconnections.ca The prices are reasonable, and the meat is inspected. Delivery to GTA is done for a nominal charge.
