Tournedos of beef
I'm sure it's simple, but, how do I cook them on an oven top, in a pan, and/or in a oven.
Anything simple, and can I use marinade with the tournedos?

They are basically smaller cuts of filet mignon (or tenderloin).
I would sear them in a cast iron pan, or a regular SS pan, until medium rare (or to whatever doneness you prefer).
Yes, you can marinade them, but I prefer a simple sauce by deglazing your pan that you cooked the tournedos in with some red wine, beef stock, and some butter and dijon mustard.
